INGREDIENTS: 

MAKES 1 LOAF 
  • 115g/4oz/½ cup butter or margarine, at room temperature 
  • 90g/3½oz/½ cup of sugar
  • 2 eggs, at room temperature, separated
  • Grated rind of 2 lemons
  • 30ml/2 tablespoon lemon juice 
  • 225g/8oz/2 cups plain (all-purpose) flour 
  • 10ml/2 tsp baking powder 
  • 120ml/4fl oz/½ cup milk 
  • 50g/2oz/⅓ cup walnuts, chopped 
  • Pinch of salt

STEPS: 

  1. Preheat the oven to 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease. 
  2. With an electric mixer, cream the butter or margarine with the sugar until light and fluffy. 
  3. Beat in the egg yolks. 
  4. Add the lemon rind and juice and stir until blended. Set aside. 
  5. In another bowl, sift together the flour and baking powder, three times. Fold into the butter mixture in three batches, alternating with the milk. Fold in the walnuts. Set aside. 
  6. Beat the egg whites and salt until stiff peaks form. Fold a large dollop of the egg whites into the walnut mixture to lighten it. Fold in the remaining egg whites carefully until just blended. 
  7. Pour the batter into the prepared tin and bake until a skewer inserted into the center of the loaf comes out clean, 45-50 minutes. Leave to stand for 5 minutes before turning out onto a rack to cool complete.
