INGREDIENTS:
MAKES 1 LOAF
- 90g/3½oz/½ cup caster (superfine) sugar
- 90g/3½oz/¾ cup plain (all-purpose) flour
- 5ml/1 tsp baking powder
- 60ml/4 tablespoon corn flour (cornstarch)
- 130g/4½oz/generous ½ cup butter, at room temperature
- 2 eggs, at room temperature
- 5ml/1 tsp vanilla extract
- 30ml/2 tablespoon currants or raisins
- 25g/1oz/¼ cup walnuts, finely chopped
- grated rind of ½ lemon
- 45ml/3 tablespoon plain (semisweet) chocolate chips
- Icing (confectioners' sugar, for dusting
STEPS:
- Preheat the oven to 180°C/350°F/Gas 4. Grease and line a 21 x 12 cm/ 8½ x 4½ in loaf tin (pan).
- Sprinkle 25ml/1½ tablespoon of the caster sugar into the pan and tilt to distribute the sugar in an even layer over the base and sides. Shake out any excess.
- Sift together the flour, baking powder and corn flour into a mixing bowl, three times. Set aside.
- With an electric mixer, cream the butter until soft. Add the remaining sugar and continue beating until light and fluffy. Add the eggs, one at a time, beating to incorporate thoroughly after each addition.
- Gently fold the dry ingredients into the butter mixture, in three batches; do not overmix.
- Fold in the vanilla, currants or raisins, walnuts, lemon rind, and chocolate chips until just blended.
- Pour the mixture into the prepared tin and bake until a skewer inserted into the center comes out clean, 45-50 minutes. Leave to cool in the tin for 5 minutes before transferring to a rack to cool completely. Dust over an even layer of icing sugar before serving.
