INGREDIENTS:

- 3 eggs
- 250ml/8fl oz/1 cup milk
- 25g/1oz/2 tablespoon butter, melted
- 75g/3oz/⅔ cup plain (all-purpose) flour
- 1.5ml/¼ tsp salt
- 1.5ml/¼ tsp paprika
- 25g/1oz/⅓ cup freshly grated Parmesan cheese
STEPS:
- Preheat the oven to 220°C/425°F/ Gas 7.
- Grease 12 small ramekins or individual baking cups. With an electric mixer, beat the eggs until they are blended. Beat in the milk and melted butter.
- Sift together the flour, salt and paprika, then beat into the egg mixture. Add the cheese and stir.
- Fill the prepared cups half-full and bake until golden, 25-30 minutes. Do not open the oven door or the popover may collapse. For drier popover, pierce each one with a knife after the 30-minute baking time and bake for 5 minutes more. Serve hot.
VARIATIONS
For traditional Yorkshire Pudding, omit the cheese and paprika, and use 50–75g/2- 3oz/4-6 tablespoon of beef dripping to replace the butter. Put them into the oven in time to serve warm as an accompaniment for roast beef.
