Baking Delicious Sesame Seed Bread At Home

INGREDIENTS:

 MAKES 1 LOAF 
  • 10ml/2 tsp active dried yeast 
  • 300ml/½ pint/1¼cups lukewarm water 
  • 200g/7oz/1¾ cups strong white bread flour 
  • 200g/7oz/1¾ cups strong whole meal (whole-wheat) bread flour 
  • 10ml/2 tsp salt  
  • 65g/2½oz/5 tablespoon toasted sesame seeds milk, for glazing 
  • 25g/1oz/2 tablespoon sesame seeds, for sprinkling. 

STEPS: 

  1. Combine the yeast and 75ml/5 tablespoon of the water and leave to dissolve for 15 minutes. Mix the flours and salt in a large bowl. Make a well in the center and pour in the yeast and water. 
  2. With a wooden spoon, stir from the center, incorporating flour with each turn, to obtain a rough dough. 
  3. Transfer to a lightly floured surface. To knead, push the dough with the palm of your hand, then fold it towards you and push away again. Repeat until smooth and elastic, then return to the bowl and cover with a plastic bag. Leave the dough in a warm place for about 1½-2 hours, until doubled in volume.
  4. Grease a 23cm/9in cake tin (pan). Knock back (punch down) the dough and knead in the sesame seeds. Divide the dough into 16 balls and place in the tin. Cover with a plastic bag and leave in a warm place until risen above the rim of the tin. 
  5. Preheat the oven to 220°C/ 425°F/Gas 7. Brush the loaf with milk and sprinkle with the sesame seeds. Bake for 15 minutes. Lower the heat to 190°C/375°F/Gas 5 and bake until the bottom sounds hollow when tapped, about 30 minutes. Cool on a rack.
