Making Delicious Orange and Raisin Scones At Home

INGREDIENTS: 

MAKES 16 
  • 275g/10oz/2½ cups plain (all-purpose) flour 
  • 7.5ml/1½ tsp baking powder 
  • 60g/2¼oz/4½ tablespoon sugar 
  • 2.5ml/½ tsp salt 
  • 65g/2½oz/5 tablespoon butter, diced 
  • 65g/2½oz/5 tablespoon margarine, diced 
  • Grated rind of large orange 
  • 50g/2oz/4 tablespoon raisins 
  • 120ml/4fl oz/½ cup buttermilk milk, for glazing 

STEPS: 

  1. Preheat the oven to 220°C/425°F/ Gas 7. Grease and flour a large baking sheet. 
  2. Combine the dry ingredients in a large bowl. Add the butter and margarine and rub in with your fingertips until the mixture resembles coarse breadcrumbs. 
  3. Add the orange rind and raisins. 
  4. Gradually stir in the buttermilk to form a soft dough. 
  5. Roll out the dough to about 2cm/¾in thick. Stamp out circles with a biscuit (cookie) cutter. 
  6. Place on the prepared sheet and brush the tops with milk. 
  7. Bake until golden, 12–15 minutes. Serve hot or warm, with butter, or whipped or clotted cream, and jam. Cook's Tip For light, tender scones, handle the dough as little as possible. If you wish, split the scones when cool and toast them under a preheated grill (broiler). Butter them while still hot.
