INGREDIENTS: 

MAKES 8 
  • 175g/6oz/1½ cups plain (all-purpose) flour 
  • 30ml/2 tablespoon sugar 
  • 15ml/1 tablespoon baking powder 
  • Pinch of salt 
  • 75ml/5 tablespoon cold butter, cut in pieces 
  • 120ml/4fl oz/½ cup buttermilk 

STEPS: 

  1. Preheat the oven to 220°C/425°F/ Gas 7. Grease and flour a baking sheet. 
  2. Sift the flour, sugar, baking powder, and salt into a bowl. 
  3. Cut in the butter with a pastry blender until the mixture resembles coarse crumbs. 
  4. Pour in the milk and stir with a fork to form a soft dough. 
  5. Roll out the dough to about 5mm/¼in thick. Stamp out rounds using a 6cm/2½in biscuit (cookie) cutter. 
  6. Place on the prepared sheet and bake until golden, about 12 minutes. Serve hot or warm, with butter and jam, to accompany tea or coffee. 

VARIATIONS 

To make a delicious and speedy dessert, split the scones in half while still warm. Butter one half, top with lightly sugared fresh strawberries, raspberries or blueberries, and sandwich with the other half. Serve at once with dollops of whipped cream.
