INGREDIENTS: 

MAKES 16 
  • 175g/6oz/¾ cup cold butter 
  • 350g/12oz/3 cups whole meal (whole-wheat) flour 
  • 150g/5oz/1¼ cups plain (all-purpose) flour 
  • 30ml/2 tablespoon caster (superfine) sugar 
  • 2.5ml/½ tsp salt 
  • 12.5ml/2½ tsp bicarbonate of soda (baking soda) 
  • 2 eggs 
  • 175ml/6fl oz/¾ cup buttermilk 
  • 35g/1¼oz/2½ tablespoon raisins 

STEPS: 

  1. Preheat the oven to 200°C/400°F/Gas 6. Grease and flour a large baking sheet. 
  2. Cut the butter into small pieces. 
  3. Combine the dry ingredients in a bowl. Add the butter and rub in with your fingertips until the mixture resembles coarse breadcrumbs. Set aside. 
  4. In another bowl, whisk together the eggs and buttermilk. Set aside 30ml/2 tablespoon for glazing. 
  5. Stir the remaining egg mixture into the dry ingredients until it just holds together. Stir in the raisins.
  6. Roll out the dough to about 2cm/¾in thick. Stamp out circles with biscuit (cookie) cutters. Place on the prepared sheet and brush with the glaze. 
  7. Bake until golden, 12-15 minutes. Allow to cool slightly before serving. Split in two with a fork while still warm and spread with butter and jam if you like.
