Irish Soda Bread is a quick bread that does not require any yeast. Instead, all of its leavening comes from baking soda and buttermilk. This Irish soda bread recipe is my grandmother’s and has been cherished in my family for years. It’s dense, yet soft and has the most incredible crusty exterior. Buttermilk and cold butter are the secret to its delicious success!

INGREDIENTS:

MAKES 1 LOAF

  • 275g/10oz/2½ cups plain (all-purpose) flour
  • 150g/5oz/1¼ cups wholemeal (whole-wheat) flour
  • 5ml/1 tsp bicarbonate of soda (baking soda)
  • 5ml/1 tsp salt
  • 25g/1oz/2 tablespoon butter or margarine, at room temperature
  • 300ml/½ pint/1¼ cups buttermilk
  • 15ml/1 tablespoon plain flour, for dusting.

STEPS:

  1. Preheat the oven to 200°C/400°F/ Gas 6. Grease a baking sheet.
  2. Sift the flour, bicarbonate of soda and salt together into a bowl. Make a well in the centre and add the butter or margarine and buttermilk. Working outwards from the centre, stir with a fork until a soft dough is formed.
  3. With floured hands, gather the dough into a ball.
  4. Transfer to a floured surface and knead for 3 minutes. Shape the dough into a large round.
  5. Place on the baking sheet. Cut a cross in the top with a sharp knife.
  6. Dust with flour. Bake until brown, 40-50 minutes. Transfer to a rack to cool.
