INGREDIENTS:
MAKES 1 LOAF
- 275g/10oz/2½ cups plain (all-purpose) flour
- 150g/5oz/1¼ cups wholemeal (whole-wheat) flour
- 5ml/1 tsp bicarbonate of soda (baking soda)
- 5ml/1 tsp salt
- 25g/1oz/2 tablespoon butter or margarine, at room temperature
- 300ml/½ pint/1¼ cups buttermilk
- 15ml/1 tablespoon plain flour, for dusting.
STEPS:
- Preheat the oven to 200°C/400°F/ Gas 6. Grease a baking sheet.
- Sift the flour, bicarbonate of soda and salt together into a bowl. Make a well in the centre and add the butter or margarine and buttermilk. Working outwards from the centre, stir with a fork until a soft dough is formed.
- With floured hands, gather the dough into a ball.
- Transfer to a floured surface and knead for 3 minutes. Shape the dough into a large round.
- Place on the baking sheet. Cut a cross in the top with a sharp knife.
- Dust with flour. Bake until brown, 40-50 minutes. Transfer to a rack to cool.
