INGREDIENTS:

MAKES 24
  • 300ml/½ pint/1¼ cups milk
  • 30ml/2 tablespoon caster (superfine) sugar
  • 50g/2oz/¼ cup butter, at room temperature
  • 10ml/2 tsp active dried yeast
  • 1 egg
  • 10ml/2 tsp salt
  • 500-575g/1lb 2oz-1lb 4oz/4½-5 cups strong white bread flour
  • Melted butter, for glazing

STEPS:

  1. Heat the milk until lukewarm; test the temperature with your knuckle. Pour into a large bowl and stir in the sugar, butter and yeast. Leave for 15 minutes to dissolve.
  2. Stir the egg and salt into the yeast mixture. Gradually stir in 500g/1lb 2oz/4½ cups of the flour. Add just enough extra flour to obtain a rough dough.
  3. Transfer to a floured surface and knead until smooth and elastic. Place in a greased bowl, cover and leave in a warm place until doubled in volume, about 1½ hours.
  4. Grease two 12 cup bun trays.
  5. Knock back (punch down) the dough. Cut into four equal pieces. Roll each piece into a rope 35cm/14in long. Cut each rope into 18 pieces, then roll each into a ball.
  6. Place three balls, side by side, in each bun cup. Cover loosely and leave to rise in a warm place until doubled in volume, about 1½ hours.
  7. Preheat the oven to 200°C/400°F/ Gas 6. Brush the rolls with glaze. Bake until lightly browned, about 20 minutes. Cool slightly before serving.
