INGREDIENTS:
MAKES 2 LOAVES
- 15ml/1 tablespoon active dry yeast
- 450ml/¾ pint/scant 2 cups lukewarm water
- 15ml/1 tablespoon salt
- 850g-1.2kg/1lb 14oz-2½lb/7½-10 cups strong white bread flour
- Semolina or flour, for sprinkling
STEPS:
- Combine the yeast and water, stir, and leave for 15 minutes to dissolve. Stir in the salt.
- Add the flour, 150g/5oz/1¼ cups at a time. Beat in with a wooden spoon, adding just enough flour to obtain a smooth dough. Alternatively, use an electric mixer with a dough hook.
- Transfer to a floured surface and knead until smooth and elastic.
- Shape into a ball, place in a greased bowl and cover with a plastic bag. Leave to rise in a warm place until doubled in volume, 2-4 hours.
- Transfer to a lightly floured board and shape into two long loaves. Place on a baking sheet sprinkled with semolina or flour and leave to rise for 5 minutes.
- Score the tops in several places with a very sharp knife. Brush with water and place in a cold oven. Set a pan of boiling water on the bottom of the oven and set the oven to 200°C/400°F/Gas 6. Bake until crusty and golden, about 40 minutes. Cool on a rack.
