- Sprinkle over the flour, and whisk until it forms a battery. Cover and leave to rise in a warm place for at least 24 hours or preferably 2-4 days, before using.

COOK'S TIP
After using, feed the remaining starter with a handful of flour and enough water to restore it to a thick batter. The starter can be chilled for up to 1 week, but must be brought back to room temperature before using.

INGREDIENTS:
MAKES 1 LOAF
- 350g/12oz/3 cups strong white bread flour
- 15ml/1 tablespoon salt
- 250ml/8fl oz/1 cup Sourdough starter
- 120ml/4fl oz/½ cup lukewarm water.
STEPS:
- Combine the flour and salt in a large bowl. Make a well in the centre and add the starter and water. With a wooden spoon, stir from the centre, incorporating more flour with each turn, to obtain a rough dough.
- Transfer the dough to a floured surface. To knead, push the dough away from you with the palm of your hand, then fold it towards pushing it away again. Repeat the and process until the dough has become smooth.
- Place in a clean bowl, cover, and leave to rise in a warm place until doubled in volume, for about 2 hours.
- Lightly grease a 20 x 10cm/8 x 4in bread tin (pan).
- Knock back (punch down) the dough with your fist. Knead briefly, then form into a loaf shape and place in the tin, seam-side down. Cover with a plastic bag, and leave to rise in a warm place, for about 1½ hours.
- Preheat the oven to 220°C/425°F/ Gas 7. Dust the top of the loaf with flour, then score lengthways. Bake for 15 minutes. Lower the heat to 190°C/375°F/Gas 5 and bake for about 30 minutes more, or until the bottom sounds hollow when tapped.
