INGREDIENTS:

MAKES 12

  • 10ml/2 tsp active dried yeast
  • 50ml/2fl oz/¼ cup lukewarm water
  • 5ml/1 tsp caster (superfine) sugar
  • 175ml/6 fl oz/¾ cup lukewarm buttermilk
  • 1.5ml/¼ tsp bicarbonate of soda (baking soda)
  • 5ml/1 tsp salt
  • 40g/1½oz/3 tablespoon butter, at room temperature
  • 200g/7oz/1¾ cups strong wholemeal (whole-wheat) bread flour
  • 150g/5oz/1¼ cups strong white bread flour
  • 1 beaten egg, for glazing.

STEPS:

  1. In a large bowl, combine the yeast, water and sugar. Stir, and leave for 15 minutes to dissolve.
  2. Add the buttermilk, bicarbonate of soda, salt and butter, and stir to blend. Stir in the wholemeal flour.
  3. Add just enough of the white flour to obtain a rough dough.
  4. Transfer to a floured surface and knead until smooth and elastic. Divide into three equal parts. Roll each into a cylinder, then cut into four.
  5. Form the pieces into torpedo shapes. Place on a greased baking sheet, cover and leave in a warm place until doubled in volume.
  6. Preheat the oven to 200°C/400°F/ Gas 6. Brush the rolls with the glaze. Bake until firm, 15-20 minutes. Cool on a rack.
