INGREDIENTS:
MAKES 2- 505g/1lb 2oz/4½ cups strong white bread flour
- 5ml/1 tsp salt
- 10ml/2 tsp active dried yeast
- 300ml/½ pint/1¼ cups lukewarm water
- 50-120ml/2-4fl oz/¼-½ cup extra-virgin olive oil
- Tomato sauce, grated cheese, olives and herbs, for toppings.
STEPS:
- Combine the flour and salt in a large mixing bowl. Make a well in the centre and add the yeast, water and 30ml/2 tablespoon of the olive oil. Leave for 15 minutes to dissolve the yeast.
- With your hands, stir until the dough just holds together. Transfer to a floured surface and knead until smooth and elastic. Avoid adding too much flour while kneading.
- Brush the inside of a clean bowl with 15ml/1 tablespoon of the oil. Place the dough in the bowl and roll around to coat with the oil. Cover with a plastic bag and leave to rise in a warm place until more than doubled in volume, about 45 minutes.
- Divide the dough into two balls. Preheat the oven to 200°C/400°F/Gas 6.
- Roll each ball into a 25cm/10in circle. Flip the circles over and onto your palm. Set each circle on the work surface and rotate, stretching the dough as you turn, until it is about 30cm/12in in diameter.
- Brush two pizza pans with oil. Place the dough circles in the pans and neaten the edges. Brush with oil
- Cover with the toppings and bake until golden, 10–12 minutes.
