INGREDIENTS:
- SERVES 8
- 5-6 firm, ripe pears
- 175g/6oz/scant 1 cup sugar
- 115g/4oz/½ cup unsalted (sweet) butter
- Whipped cream, for serving
- 115g/4oz/1 cup plain (all-purpose) flour
- 1.5ml/¼ tsp salt
- 130g/4½oz/generous ½ cup cold butter, cut into pieces
- 40g/1½oz/¼ cup cold white vegetable fat (shortening), cut into pieces
- 60ml/4 tablespoon iced water.
STEPS:
- For the pastry, combine the flour and salt in a bowl. Add the butter and vegetable fat and cut in with a pastry blender until the mixture resembles coarse crumbs. With a fork, stir in enough iced water to bind the dough. Gather into a ball, wrap in clear film (plastic wrap) and chill for at least 20 minutes. Preheat the oven to 200°C/400°F/Gas 6.
- Quarter, peel and core the pears. Place in a bowl and toss with a few tablespoons of the sugar.
- In a 27cm/10½ in ovenproof frying pan, melt the butter over moderately high heat. Add the remaining sugar. When it starts to colour, arrange the pears evenly around the edge and in the centre.
- Continue cooking, uncovered, until caramelized, about 20 minutes.
- Leave the fruit to cool. Roll out a circle of dough slightly larger than the diameter of the pan. Place the dough on top of the pears, tucking it around the edges. Transfer the pan the oven and bake for 15 minutes, to then reduce the heat to 180°C/350°F/ Gas 4. Bake until golden, about 15 minutes more.
- Let the pie cool in the pan for about 3-4 minutes. Run a knife around the edge of the pan to loosen the pie, ensuring that the knife reaches down to the bottom of the pan. Invert a plate on top and, protecting your hands with oven gloves, hold plate and pan firmly, and turn them both over quickly.
- Lift off the pan. If any pears stick the to pan, remove them gently with a metal spatula and replace them carefully on the pie. Serve warm, with the whipped cream passed round separately.
VARIATION
For Caramelized Upside Down Apple Pie, replace the pears with 8-9 firm, tart apples. There may seem to be too many apples, but they shrink slightly as they cook.
