INGREDIENTS:

SERVES 8
  • 3 large egg yolks
  • 1 x 400g/14oz can sweetened condensed milk
  • 15ml/1 tablespoon grated lime rind
  • 120ml/4fl oz/½ cup fresh lime juice
  • Green food colouring (optional)
  • 120ml/4fl oz/½ cup whipping cream
FOR THE BASE
  • 115g/4oz/2 cups digestive biscuits (graham crackers), crushed
  • 65g/2½oz/5 tablespoon butter or margarine, melted.

STEPS:

  1. Preheat the oven to 180°C/350°F/Gas 4.
  2. For the base, place the crushed biscuits in a bowl and add the butter or margarine. Mix to combine.
  3. Press the mixture evenly over the base and sides of a 23cm/9in pie dish. Bake for 8 minutes. Leave to cool.
  4. Beat the yolks until thick. Beat in the milk, lime rind and juice and colouring, if using. Pour into the pastry case (pie shell) and chill until set, about 4 hours. To serve, whip the cream. Pipe a lattice pattern on top.

VARIATION 

Use lemons instead of limes, with yellow food colouring.
