INGREDIENTS:
SERVES 8
- 3 eggs
- Pinch of salt
- 50g/2oz/ ¼ cup caster (superfine) sugar
- 50g/2oz/¼ cup butter or margarine, melted
- 250ml/8fl oz/1 cup pure maple syrup
- 115g/4oz/1 cup chopped walnuts
- Whipped cream, for decorating
FOR THE PASTRY- 65g/2½oz/9 tablespoon plain (all-purpose) flour
- 65g/2½oz/9 tablespoon wholemeal (whole-wheat) flour
- Pinch of salt
- 50g/2oz/¼ cup cold butter, cut in pieces
- 40g/1½oz/3 tablespoon cold white vegetable fat (shortening), cut in pieces
- 1 egg yolk
- 30-45ml/2-3 tablespoon iced water
STEPS:
- For the pastry, mix the flours and salt in a bowl. Add the butter and fat and cut in with a pastry blender until the mixture resembles coarse breadcrumbs. With a fork, stir in the egg yolk and just enough water to bind the pastry. Form into a ball.
- Wrap in baking parchment and chill for 20 minutes.
- Preheat oven to 220°C/425°F/Gas 7.
- On a lightly floured surface, roll out the pastry about 3mm/⅛in thick and transfer to a 23cm/9in pie dish. Trim the edge. To decorate, roll out the trimmings. With a small heart shaped cutter, stamp out enough hearts to go around the rim of the pie. Brush the edge with water, then arrange the pastry hearts all around.
- Prick the bottom with a fork. Line with crumpled baking parchment and fill with baking beans. Bake for 10 minutes. Remove the paper and beans and continue baking until golden brown, 3–6 minutes more.
- In a bowl, whisk the eggs, salt and sugar together. Stir in the butter and maple syrup.
- Set the pastry case (pie shell) on a baking sheet. Pour in the filling, then sprinkle the nuts over the top.
- Bake until just set, about 35 minutes. Cool on a rack. Decorate with whipped cream, if you like.
