INGREDIENTS:
MAKES 1 LOAF
- 115g/4oz/1 cup plain (all purpose) flour
- 65g/2½oz/5 tablespoon caster (superfine) sugar
- 5ml/1 tsp salt
- 15ml/1 tablespoon baking powder
- 175g/6oz/1½ cups cornmeal or polenta
- 350ml/12fl oz/1½ cups milk
- 2 eggs
- 75g/3oz/6 tablespoon butter, melted
- 115g/4oz/½ cup margarine, melted.
STEPS:
- Preheat the oven to 200°C/400°F/Gas 6. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease.
- Sift the flour, sugar, salt and baking powder into a mixing bowl.
- Add the cornmeal and stir to blend. Make a well in the center.
- Whisk together the milk, eggs butter and margarine. Pour the mixture into the well. Stir until just blended; do not overmix.
- Pour into the tin and bake until a skewer inserted into the center comes out clean, about 45, minutes. Serve hot or at room temperature.
