How To Make Date and Pecan Loaf At Home?

INGREDIENTS: 

MAKES 1 LOAF 
  • 175g/6oz/1 cup pitted dates, chopped 
  • 175ml/6fl oz/¾ cup boiling water 
  • 50g/2oz/¼ cup unsalted (sweet) butter, at room temperature 
  • 50g/2oz/¼ cup soft dark brown sugar 
  • 50g/2oz/¼ cup caster (superfine) sugar 
  • 1 egg, at room temperature 
  • 30ml/2 tablespoon brandy 
  • 165g/5½oz/1¼ cups plain (all-purpose) flour 
  • 10ml/2 tsp baking powder 
  • 2.5ml/½ tsp salt 
  • 4ml/¾ tsp freshly grated nutmeg
  • 75g/3oz/¾ cup coarsely chopped pecan nuts or walnuts

STEPS: 

  1. Place the dates in a bowl and pour over the boiling water. Set aside to cool. 
  2. Preheat the oven 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease. 
  3. With an electric mixture, cream the butter and sugars until light and fluffy. Beat in the egg and brandy, then set aside. 
  4. Sift the flour, baking powder, salt and nutmeg together, three times. 
  5. Fold the dry ingredients into the sugar mixture in three batches, alternating with the dates and water. 
  6. Fold in the nuts. 
  7. Pour the mixture into the prepared tin and bake until a skewer inserted into the center comes out clean, 45-50 minutes. Leave to cool in the tin for 10 minutes. Leave to cool in the tin for 10 minutes before transferring to a rack to cool completely.
