INGREDIENTS:
MAKES 1 LOAF
- 175g/6oz/1 cup pitted dates, chopped
- 175ml/6fl oz/¾ cup boiling water
- 50g/2oz/¼ cup unsalted (sweet) butter, at room temperature
- 50g/2oz/¼ cup soft dark brown sugar
- 50g/2oz/¼ cup caster (superfine) sugar
- 1 egg, at room temperature
- 30ml/2 tablespoon brandy
- 165g/5½oz/1¼ cups plain (all-purpose) flour
- 10ml/2 tsp baking powder
- 2.5ml/½ tsp salt
- 4ml/¾ tsp freshly grated nutmeg
- 75g/3oz/¾ cup coarsely chopped pecan nuts or walnuts
STEPS:
- Place the dates in a bowl and pour over the boiling water. Set aside to cool.
- Preheat the oven 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease.
- With an electric mixture, cream the butter and sugars until light and fluffy. Beat in the egg and brandy, then set aside.
- Sift the flour, baking powder, salt and nutmeg together, three times.
- Fold the dry ingredients into the sugar mixture in three batches, alternating with the dates and water.
- Fold in the nuts.
- Pour the mixture into the prepared tin and bake until a skewer inserted into the center comes out clean, 45-50 minutes. Leave to cool in the tin for 10 minutes. Leave to cool in the tin for 10 minutes before transferring to a rack to cool completely.
