INGREDIENTS: 

MAKES 2 LOAVES 
  • 275g/10oz/2½ cups plain (all-purpose) flour 
  • 10ml/2 tsp bicarbonate of soda (baking soda) 
  • 10ml/2 tsp ground cinnamon 
  • 2.5ml/½ tsp salt 
  • 115g/4oz/½ cup margarine, at room temperature 
  • 3 eggs, at room temperature 
  • 300g/11oz/generous 1½ cups caster (superfine) sugar 
  • 120ml/4fl oz/½ cup vegetable oil 
  • 1 large ripe mango, peeled and chopped 
  • 90g/3½oz/generous 1 cup desiccated (dry unsweetened) coconut 
  • 65g/2½oz/½ cup raisins 

STEPS: 

  1. Preheat the oven to 180°C/350°F/Gas 4. Line the bottom and sides of two 23 x 13cm/9 x 5in loaf tins (pans) with the baking and grease. 
  2. Sift together the flour, bicarbonate of soda, cinnamon and salt. Set aside. 
  3. With an electric mixer, cream the margarine until soft.
  4. Beat in the eggs and sugar until light and fluffy. Beat in the oil. 
  5. Fold the dry ingredients into the creamed ingredients in three batches. 
  6. Fold in the mango, two-thirds of the coconut and the raisins. 
  7. Spoon the batter into the pans. 
  8. Sprinkle over the remaining coconut. Bake until a skewer inserted into the center comes out clean, 50-60 minutes. Leave to stand for 10 minutes before turning out on to a rack to cool completely.
