INGREDIENTS:
MAKES 2 LOAVES
- 275g/10oz/2½ cups plain (all-purpose) flour
- 10ml/2 tsp bicarbonate of soda (baking soda)
- 10ml/2 tsp ground cinnamon
- 2.5ml/½ tsp salt
- 115g/4oz/½ cup margarine, at room temperature
- 3 eggs, at room temperature
- 300g/11oz/generous 1½ cups caster (superfine) sugar
- 120ml/4fl oz/½ cup vegetable oil
- 1 large ripe mango, peeled and chopped
- 90g/3½oz/generous 1 cup desiccated (dry unsweetened) coconut
- 65g/2½oz/½ cup raisins
STEPS:
- Preheat the oven to 180°C/350°F/Gas 4. Line the bottom and sides of two 23 x 13cm/9 x 5in loaf tins (pans) with the baking and grease.
- Sift together the flour, bicarbonate of soda, cinnamon and salt. Set aside.
- With an electric mixer, cream the margarine until soft.
- Beat in the eggs and sugar until light and fluffy. Beat in the oil.
- Fold the dry ingredients into the creamed ingredients in three batches.
- Fold in the mango, two-thirds of the coconut and the raisins.
- Spoon the batter into the pans.
- Sprinkle over the remaining coconut. Bake until a skewer inserted into the center comes out clean, 50-60 minutes. Leave to stand for 10 minutes before turning out on to a rack to cool completely.
