Baking Orange and Honey Tea Bread At Home

INGREDIENTS: 

MAKES 1 LOAF 
  • 375g/13oz/3¼ cups plain (all purpose) flour
  • 12.5ml/2½ tsp baking powder 
  • 2.5ml/½ tsp bicarbonate of soda (baking soda) 
  • 2.5ml/½ tsp salt 
  • 25g/1oz/2 tablespoon margarine 
  • 250ml/8fl oz/1 cup clear honey 
  • 1 egg, at room temperature, lightly beaten 
  • 25ml/1½ tablespoon grated orange rind 
  • 175ml/6fl oz/¾ cup freshly squeezed orange juice 
  • 115g/4oz/1 cup walnuts, chopped

STEPS: 

  1. Preheat the oven to 160°C/325°F/Gas 3.
  2. Sift together the flour, baking powder, bicarbonate of soda and salt. 
  3. Line the bottom and sides of a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease. 
  4. With an electric mixer, cream the margarine until soft. Stir in the honey until blended, then stir in the egg. Add the orange rind and stir to combine thoroughly. 
  5. Fold the flour mixture into the honey and egg mixture in three batches, alternating with the orange juice. Stir in the walnuts. 
  6. Pour into the tin and bake until a skewer inserted into the center comes out clean, 60-70 minutes. Leave to stand for 10 minutes before turning out on a rack to cool.
