INGREDIENTS:
MAKES 1 LOAF
- 375g/13oz/3¼ cups plain (all purpose) flour
- 12.5ml/2½ tsp baking powder
- 2.5ml/½ tsp bicarbonate of soda (baking soda)
- 2.5ml/½ tsp salt
- 25g/1oz/2 tablespoon margarine
- 250ml/8fl oz/1 cup clear honey
- 1 egg, at room temperature, lightly beaten
- 25ml/1½ tablespoon grated orange rind
- 175ml/6fl oz/¾ cup freshly squeezed orange juice
- 115g/4oz/1 cup walnuts, chopped
STEPS:
- Preheat the oven to 160°C/325°F/Gas 3.
- Sift together the flour, baking powder, bicarbonate of soda and salt.
- Line the bottom and sides of a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease.
- With an electric mixer, cream the margarine until soft. Stir in the honey until blended, then stir in the egg. Add the orange rind and stir to combine thoroughly.
- Fold the flour mixture into the honey and egg mixture in three batches, alternating with the orange juice. Stir in the walnuts.
- Pour into the tin and bake until a skewer inserted into the center comes out clean, 60-70 minutes. Leave to stand for 10 minutes before turning out on a rack to cool.
