Baking Whole meal Bread At Home

INGREDIENTS: 

MAKES 1 LOAF  
  • 600g/1lb 5oz/5¼ cups strong whole meal (whole-wheat) bread flour 
  • 10ml/2 tsp salt 
  • 20ml/4 tsp active dried yeast 
  • 425 ml/15fl oz/generous 1⅔ cups lukewarm water 
  • 30ml/2 tablespoon honey 
  • 45ml/3 tablespoon oil  
  • 40g/1½oz wheat germ 
  • Milk, for glazing 

STEPS: 

  1. Combine the flour and salt in a bowl and place in the oven at its lowest setting until warmed, 8-10 minutes. 
  2. Meanwhile, combine the yeast with half of the water in a small bowl and leave to dissolve. 
  3. Make a well in the center of the flour. Pour in the yeast mixture, the remaining water, honey, oil and wheat germ. With a wooden spoon, stir from the center until smooth. 
  4. Transfer the dough to a lightly floured surface and knead just enough to shape into a loaf. 
  5. Grease a 23 x 13cm/9 x 5in loaf tin (pan), place the dough in it and cover with a plastic bag. Leave in a warm place until the dough is about 2.5cm/1 inch higher than the tin rim, about 1 hour. 
  6. Preheat the oven to 200°C/400°F/ Gas 6. Bake until the bottom sounds hollow when tapped, 35-40 minutes. Cool.
