MAKES 1 LOAF
- 1 egg
- 250ml/8fl oz/1 cup bottled or homemade apple sauce
- 50g/2oz/¼ cup butter or margarine melted
- 115g/4oz/½ cup soft dark brown sugar
- 50g/2oz/¼ cup caster (superfine) sugar
- 275g/10oz/2½ cups plain (all-purpose) flour
- 10ml/2 tsp baking powder
- 2.5ml/½ tsp bicarbonate of soda (baking soda)
- 2.5ml/½ tsp salt
- 5ml/1 tsp ground cinnamon
- 2.5ml/½ tsp freshly grated nutmeg
- 65g/2½oz/½ cup currants or raisins
- 50g/2oz/⅓ cup pecan nuts or walnuts, chopped
- Preheat the oven to 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease.
- Break the egg into a bowl and beat lightly. Stir in the apple sauce, butter or margarine and both sugars. Set aside.
- In another bowl, sift together the flour, baking powder, bicarbonate of soda, salt, cinnamon, nutmeg. Fold the dry ingredients into the apple sauce mixture in three batches.
- Stir in the currants or raisins, and nuts.
- Pour into the prepared tin and bake until skewer inserted into the center comes out clean, about 1 hour. Leave to stand for 10 minutes. Turn out onto a rack and cool completely.
