INGREDIENTS: 

MAKES 1 LOAF 
  • 1 egg 
  • 250ml/8fl oz/1 cup bottled or homemade apple sauce
  • 50g/2oz/¼ cup butter or margarine melted 
  • 115g/4oz/½ cup soft dark brown sugar 
  • 50g/2oz/¼ cup caster (superfine) sugar 
  • 275g/10oz/2½ cups plain (all-purpose) flour 
  • 10ml/2 tsp baking powder 
  • 2.5ml/½ tsp bicarbonate of soda (baking soda)
  • 2.5ml/½ tsp salt 
  • 5ml/1 tsp ground cinnamon
  • 2.5ml/½ tsp freshly grated nutmeg 
  • 65g/2½oz/½ cup currants or raisins 
  • 50g/2oz/⅓ cup pecan nuts or walnuts, chopped

 STEPS: 

  1. Preheat the oven to 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease. 
  2. Break the egg into a bowl and beat lightly. Stir in the apple sauce, butter or margarine and both sugars. Set aside. 
  3. In another bowl, sift together the flour, baking powder, bicarbonate of soda, salt, cinnamon, nutmeg. Fold the dry ingredients into the apple sauce mixture in three batches. 
  4. Stir in the currants or raisins, and nuts. 
  5. Pour into the prepared tin and bake until skewer inserted into the center comes out clean, about 1 hour. Leave to stand for 10 minutes. Turn out onto a rack and cool completely.
