Make Delicious Apricot Nut Loaf At Home

INGREDIENTS: 

MAKES 1 LOAF 
  • 115g/4oz/½ cup ready-to-eat dried apricots 
  • 1 large orange 
  • 75g/3oz/⅔ cup raisins 
  • 150g/5oz/¾ cup caster (superfine) sugar 
  • 85ml/3fl oz/generous ⅓ cup oil 
  • 2 eggs, lightly beaten
  • 250g/9oz/2¼ cups plain (all-purpose) flour
  • 10ml/2 tsp baking powder 
  • 2.5ml/½ tsp salt 
  • 5ml/1 tsp bicarbonate of soda (baking soda) 
  • 50g/2oz/½ cup chopped walnuts

STEPS: 

  1. Preheat the oven to 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease. 
  2. Place the apricots in a bowl, cover with lukewarm water and leave to stand for 30 minutes. 
  3. With the vegetable peeler, remove the orange rind, leaving the pith. 
  4. With a sharp knife, finely chop the orange rind strips.
  5. Drain the apricots and chop coarsely. Place in a bowl with the orange rind and raisins. Set aside. 
  6. Squeeze the peeled orange. Measure the juice and add enough hot water to obtain 175ml/6fl oz/¾ cup liquid. 
  7. Pour the orange juice mixture over the apricot mixture. Stir in the sugar, oil and eggs. Set aside. 
  8. In another bowl, sift together the flour baking powder, salt and bicarbonate of soda. Fold the flour mixture into the apricot mixture in three batches. 
  9. Stir in the walnuts. 
  10. Spoon the mixture into the prepared tin and bake until a skewer inserted into the center comes out clean, 55-60 minutes. If the loaf browns too quickly, protect the top with a sheet of foil. Leave to cool in the tin for 10 minutes before transferring to a rack to cool.
