INGREDIENTS:
MAKES 1 LOAF
- 115g/4oz/½ cup ready-to-eat dried apricots
- 1 large orange
- 75g/3oz/⅔ cup raisins
- 150g/5oz/¾ cup caster (superfine) sugar
- 85ml/3fl oz/generous ⅓ cup oil
- 2 eggs, lightly beaten
- 250g/9oz/2¼ cups plain (all-purpose) flour
- 10ml/2 tsp baking powder
- 2.5ml/½ tsp salt
- 5ml/1 tsp bicarbonate of soda (baking soda)
- 50g/2oz/½ cup chopped walnuts
- Preheat the oven to 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease.
- Place the apricots in a bowl, cover with lukewarm water and leave to stand for 30 minutes.
- With the vegetable peeler, remove the orange rind, leaving the pith.
- With a sharp knife, finely chop the orange rind strips.
- Drain the apricots and chop coarsely. Place in a bowl with the orange rind and raisins. Set aside.
- Squeeze the peeled orange. Measure the juice and add enough hot water to obtain 175ml/6fl oz/¾ cup liquid.
- Pour the orange juice mixture over the apricot mixture. Stir in the sugar, oil and eggs. Set aside.
- In another bowl, sift together the flour baking powder, salt and bicarbonate of soda. Fold the flour mixture into the apricot mixture in three batches.
- Stir in the walnuts.
- Spoon the mixture into the prepared tin and bake until a skewer inserted into the center comes out clean, 55-60 minutes. If the loaf browns too quickly, protect the top with a sheet of foil. Leave to cool in the tin for 10 minutes before transferring to a rack to cool.
