INGREDIENTS: 

MAKE 8 PIECES 
  • 50g/2oz/¼ cup butter or margarine, at room temperature 
  • 175g/6oz/scant 1 cup caster (superfine) sugar 
  • 1 egg, at room temperature 
  • 120ml/4fl oz/½ cup milk
  • 225g/8oz/2 cups plain (all-purpose) flour 
  • 10ml/2 tsp baking powder 
  • 2.5ml/½ tsp salt 
  • 275g/10oz/2½ cups fresh bilberries, or blueberries 
FOR THE TOPPING 
  • 115g/4oz/generous ½ cup sugar 
  • 40g/1½oz/⅓ cup plain (all-purpose) flour 
  • 2.5ml/½ tsp ground cinnamon 
  • 50g/2oz/¼ cup butter, cut in pieces 

STEPS: 

  1. Preheat the oven to 190°C/375°F/ Gas 5. Grease a 23 x 13cm/9in baking dish. 
  2. With an electric mixer, cream the butter or margarine with the sugar until light and fluffy. Add the egg, beat to combine, then mix in the milk until blended. 
  3. Sift over the flour, baking powder and salt, and stir just enough to blend the ingredients. 
  4. Add the berries and stir.
  5. Transfer to the baking dish. 
  6. For the topping, place the sugar, flour, cinnamon and butter into a mixing bowl. Cut in with a pastry blender until the mixture resembles coarse breadcrumbs. 
  7. Sprinkle the topping over the mixture in the baking dish. 
  8. Bake until a skewer inserted into the center comes out clean, about 45 minutes. Serve warm or cold.
