INGREDIENTS:
MAKE 8 PIECES
- 50g/2oz/¼ cup butter or margarine, at room temperature
- 175g/6oz/scant 1 cup caster (superfine) sugar
- 1 egg, at room temperature
- 120ml/4fl oz/½ cup milk
- 225g/8oz/2 cups plain (all-purpose) flour
- 10ml/2 tsp baking powder
- 2.5ml/½ tsp salt
- 275g/10oz/2½ cups fresh bilberries, or blueberries
FOR THE TOPPING
- 115g/4oz/generous ½ cup sugar
- 40g/1½oz/⅓ cup plain (all-purpose) flour
- 2.5ml/½ tsp ground cinnamon
- 50g/2oz/¼ cup butter, cut in pieces
STEPS:
- Preheat the oven to 190°C/375°F/ Gas 5. Grease a 23 x 13cm/9in baking dish.
- With an electric mixer, cream the butter or margarine with the sugar until light and fluffy. Add the egg, beat to combine, then mix in the milk until blended.
- Sift over the flour, baking powder and salt, and stir just enough to blend the ingredients.
- Add the berries and stir.
- Transfer to the baking dish.
- For the topping, place the sugar, flour, cinnamon and butter into a mixing bowl. Cut in with a pastry blender until the mixture resembles coarse breadcrumbs.
- Sprinkle the topping over the mixture in the baking dish.
- Bake until a skewer inserted into the center comes out clean, about 45 minutes. Serve warm or cold.
