INGREDIENTS: 

MAKES 1 LOAF 
  • 450g/1lb/2⅔ cups mixed dried fruits, such as currants, raisins, chopped ready-to eat dried apricots and dried cherries 
  • 300ml/½ pint/1¼ cups cold strong tea 
  • 200g/7oz/scant 1 cup soft dark brown sugar
  • grated rind and juice of 1 small orange 
  • grated rind and juice of 1 lemon
  • 1 egg, lightly beaten 
  • 200g/7oz/1¾ cups plain (all-purpose) flour 
  • 15ml/1 tablespoon baking powder
  • Pinch of salt 

STEPS: 

  1. In a bowl, mix the dried fruit with the tea and soak overnight. 
  2. Preheat the oven to 180°C/350°F/ Gas 4. Line the base and sides of a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease the paper. 
  3. Strain the fruit, reserving the liquid. In a bowl, combine the brown sugar, grated orange and lemon rind, and fruit. 
  4. Pour the orange and lemon juice into a measuring jug (cup); if the quantity is less than 250ml/8fl oz/1 cup, top up with the soaking liquid. 
  5. Stir the citrus juice and egg into the dried fruit mixture. 
  6. In another bowl, sift together the flour, baking powder and salt. Stir into the fruit mixture until blended. 
  7. Transfer to the prepared tin and bake until a skewer inserted into the center comes out clean, about 1¼ hours. Leave to stand for 10 minutes before turning out.
