INGREDIENTS:
MAKES 1 LOAF
- 1 large ripe banana
- 115g/4oz/½ cup butter, at room temperature
- 165g/5½oz/generous ¾ cup caster (superfine) sugar
- 2 eggs, at room temperature
- 215g/7½ oz/scant 2 cups plain (all-purpose) flour
- 5ml/1 tsp salt
- 5ml/1 tsp bicarbonate of soda (baking soda)
- 2.5ml/½ tsp freshly grated nutmeg
- 1.5ml/¼ tsp ground allspice
- 1.5ml/¼ tsp ground cloves
- 175ml/6fl oz/¾ cup sour cream
- 5ml/1 tsp vanilla extract
- 115g/40z/1 cup icing (confectioners') sugar
- 15-30ml/1-2 tablespoon lemon juice.
STEPS:
- Preheat the oven to 180°C/350°F/ Gas 4. Line a 21 x 11 cm/8½ x 4½in loaf tin (pan) with baking parchment; grease.
- With a fork, mash the banana in a bowl. Set aside.
- With an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating to blend well after each addition.
- Sift together the flour, salt, bicarbonate of soda, nutmeg, allspice and cloves. Add to the butter mixture and stir to combine well.
- Add the sour cream, banana, and vanilla and mix just enough to blend. Pour into the prepared tin.
- Bake until the top springs back when touched lightly, 45-50 minutes. Leave to cool in the pan for 10 minutes. Turn out onto a wire rack to cool.
- For the glaze, combine the icing sugar and lemon juice, then stir until smooth.
- To glaze, place the cooled loaf on a rack set over a baking sheet. Pour the glaze over the top of the loaf and allow to set.
