INGREDIENTS:
MAKES 1 LOAF
- 50g/2oz/¼ cup butter
- 3 eggs
- 250ml/8fl oz/1 cup vegetable oil
- 300g/11oz/generous 1½ cups sugar
- 2 mediums unpeeled courgettes (zucchini), grated
- 275g/10oz/2½ cups plain (all-purpose) flour
- 10ml/2 tsp bicarbonate of soda (baking soda)
- 5ml/1 tsp baking powder
- 5ml/1 tsp salt
- 5ml/1 tsp ground cinnamon
- 5ml/1 tsp freshly grated nutmeg
- 1.5ml/¼ tsp ground cloves
- 115g/4oz/⅔ cup walnuts, chopped
STEPS:
- Preheat the oven to 180°C/350°F/ Gas 4.
- Line the base and sides of a 23 x 13cm/9 x 5 in loaf tin (pan) with baking parchment and grease.
- In a pan, melt the butter over low heat. Set aside.
- With an electric mixer, beat the eggs and oil together until thick. Beat in the sugar. Stir in the melted butter and courgettes. Set aside.
- In another bowl, sift all the dry ingredients together three times. Carefully fold into the courgette mixture. Fold in the walnuts.
- Pour into the tin and bake until a skewer inserted into the center comes out clean, 60-70 minutes. Leave to stand for 10 minutes before turning out onto a wire rack to cool completely.
