INGREDIENTS:

- 75g/3oz/⅔ cup butter
- 50g/2oz/¼ cup granulated sugar
- 1 egg yolk
- Grated rind and juice of ½ lemon
- 2.5ml/½ tsp vanilla extract
- 30ml/2 tablespoon whipping cream
- 115g/4oz/1 cup plain (all purpose) flour
FOR THE TOPPING
- 225g/8oz/generous 1 cup granulated sugar
- 75g/3oz/¾ cup flaked (sliced) almonds
- 4 egg whites
- 2.5ml/½ tsp ground ginger
- 2.5ml/½ tsp ground cinnamon.
STEPS:
- Preheat the oven to 190°C/375°F/Gas 5. Line a 33 x 23cm/13 x 9in Swiss roll tin (jelly roll pan) with baking parchment; grease the paper.
- Cream the butter and sugar. Beat in the egg yolk, lemon rind and juice, vanilla extract and cream.
- Gradually stir in the flour. Gather into a ball of dough.
- With lightly floured fingers, press the dough into the prepared tin. Bake for 15 minutes. Remove from the oven but leave the oven on.
- To make the topping, combine all the ingredients in a heavy pan. Cook, stirring until the mixture comes to the boil.
- Continue boiling until just golden, about 1 minute. Pour over the dough, spreading evenly.
- Return to the oven and bake for about 45 minutes. Remove and score into bars or squares. Cool completely before cutting into squares and serving.
