INGREDIENTS

MAKES 18 
  • 75g/3oz/⅔ cup butter 
  • 50g/2oz/¼ cup granulated sugar 
  • 1 egg yolk 
  • Grated rind and juice of ½ lemon 
  • 2.5ml/½ tsp vanilla extract 
  • 30ml/2 tablespoon whipping cream 
  • 115g/4oz/1 cup plain (all purpose) flour 
FOR THE TOPPING 
  • 225g/8oz/generous 1 cup granulated sugar 
  • 75g/3oz/¾ cup flaked (sliced) almonds 
  • 4 egg whites  
  • 2.5ml/½ tsp ground ginger 
  • 2.5ml/½ tsp ground cinnamon.

STEPS

  1. Preheat the oven to 190°C/375°F/Gas 5. Line a 33 x 23cm/13 x 9in Swiss roll tin (jelly roll pan) with baking parchment; grease the paper. 
  2. Cream the butter and sugar. Beat in the egg yolk, lemon rind and juice, vanilla extract and cream. 
  3. Gradually stir in the flour. Gather into a ball of dough. 
  4. With lightly floured fingers, press the dough into the prepared tin. Bake for 15 minutes. Remove from the oven but leave the oven on.  
  5. To make the topping, combine all the ingredients in a heavy pan. Cook, stirring until the mixture comes to the boil. 
  6. Continue boiling until just golden, about 1 minute. Pour over the dough, spreading evenly. 
  7. Return to the oven and bake for about 45 minutes. Remove and score into bars or squares. Cool completely before cutting into squares and serving.
