INGREDIENTS:

- 75g/3oz/scant 1 cup rolled oats
- 250ml/8fl oz/1 cup buttermilk
- 115g/4oz/½ cup butter, at room temperature
- 90g/3½oz/generous ⅓ cup soft dark brown sugar
- 1 egg, at room temperature
- 115g/4oz/1 cup plain (all-purpose) flour
- 5ml/1 tsp baking powder
- 2.5ml/½ tsp bicarbonate of soda (baking soda)
- 1.5ml/¼ tsp salt
- 25g/1oz/2 tablespoon raisins
STEPS:
- In a bowl, combine the oats and buttermilk, and leave to soak for 1 hour.
- Lightly grease a 12-cup muffin tray or use paper cases.
- Preheat the oven to 200°C/400°F/Gas 6. With an electric mixer, cream the butter and sugar until light and fluffy. Beat in the egg.
- In another bowl, sift the flour, baking powder, bicarbonate of soda and salt. Stir into the butter mixture, alternating with the oat mixture. Fold in the raisins. Do not overmix.
- Fill the prepared cups two-thirds full. Bake until a skewer inserted in the center comes out clean, 20-25 minutes. Transfer to a rack to cool.
COOK'S TIP
If buttermilk is not available, add 5ml/1 tsp lemon juice or vinegar to milk. Let the mixture stand for a few minutes to curdle.
