INGREDIENTS:

- 50g/20z/¼ cup butter or margarine
- 40g/1½oz/⅔ cup plain (all-purpose) flour
- 50g/2oz/½ cup whole meal (whole-wheat) flour
- 7.5ml/1½ tsp bicarbonate of soda (baking soda)
- pinch of salt
- 5ml/1 tsp ground cinnamon
- 25g/1oz/¼ cup bran
- 75g/3oz/generous ½ cup raisins
- 65g/2½oz/5 tablespoon soft dark brown sugar
- 50g/2oz/¼ cup caster (superfine) sugar
- 1 egg
- 250ml/8fl oz/1 cup buttermilk
- Juice of ½ lemon.
STEPS:
- Preheat the oven to 200°C/400°F/ Gas 6. Grease 15 bun-tray cups.
- Place the butter or margarine in a pan and melt over gentle heat. Set aside.
- In a mixing bowl, sift together the flours, bicarbonate of soda, salt and cinnamon.
- Add the bran, raisins and sugars and stir until blended.
- In another bowl, mix the egg, buttermilk, lemon juice and melted butter.
- Add the buttermilk mixture to the dry ingredients and stir lightly and quickly until just moistened; do not mix until smooth.
- Spoon the mixture into the prepared bun tray, filling the cups almost to the top. Half-fill any empty cups with water. Bake until golden, 15-20 minutes. Serve warm or at room temperature.
