How To Make Raisin Bran Buns At Home?

INGREDIENTS

MAKES 15 
  • 50g/20z/¼ cup butter or margarine 
  • 40g/1½oz/⅔ cup plain (all-purpose) flour
  • 50g/2oz/½ cup whole meal (whole-wheat) flour
  • 7.5ml/1½ tsp bicarbonate of soda (baking soda) 
  • pinch of salt 
  • 5ml/1 tsp ground cinnamon 
  • 25g/1oz/¼ cup bran
  • 75g/3oz/generous ½ cup raisins 
  • 65g/2½oz/5 tablespoon soft dark brown sugar 
  • 50g/2oz/¼ cup caster (superfine) sugar 
  • 1 egg
  • 250ml/8fl oz/1 cup buttermilk 
  • Juice of ½ lemon.

STEPS

  1. Preheat the oven to 200°C/400°F/ Gas 6. Grease 15 bun-tray cups. 
  2. Place the butter or margarine in a pan and melt over gentle heat. Set aside. 
  3. In a mixing bowl, sift together the flours, bicarbonate of soda, salt and cinnamon. 
  4. Add the bran, raisins and sugars and stir until blended. 
  5. In another bowl, mix the egg, buttermilk, lemon juice and melted butter. 
  6. Add the buttermilk mixture to the dry ingredients and stir lightly and quickly until just moistened; do not mix until smooth. 
  7. Spoon the mixture into the prepared bun tray, filling the cups almost to the top. Half-fill any empty cups with water. Bake until golden, 15-20 minutes. Serve warm or at room temperature.
