The trick to bake thick cookies and to use enough flour in the dough so there’s no too much moisture, but also to make sure that the dough isn’t too warm. Make sure to use butter at a Cool room temperature. If the dough is too Warm when it enters the oven the cookies will spread out and become thin.Keeping Chocolate Chip Cookies Fresh:
The best cookies are the freshest, there’s no magical way around that. However, here’s a few tricks to keeping them fresh and soft for as long as possible!I love cookies straight from the oven the best. I always keep pre-scooped balls of cookie dough in a Ziploc bag in my freezer so I can bake cookies off and have them warm from the oven in a matter of minutes whenever I want.
But for those times when you need to keep already baked cookies soft, there are my tips. First of all, most cookies can be stored in an airtight container at room temp for up to 5 days. Be sure they are completely cooled before storing.
To keep Cookies soft, you can add an apple wedge, piece of bread, or a tortilla on the top and bottom of the cookies to the container a day or two after baking them, or whenever you find the texture starting to harden. The moisture from the bread or cookie will migrate to your cookies, making them soft and chewy again.

INGREDIENTS:
MAKES 24- 115g/4oz/½ cup butter or margarine, at room temperature
- 50g/2oz/¼ cup caster (superfine) sugar
- 90g/3½oz/scant ½ cup soft dark brown sugar
- 1 egg
- 2.5ml/½ tablespoon vanilla extract
- 175g/6oz/1½ cups plain (all-purpose) flour
- 2.5ml/½ tablespoon bicarbonate of soda (baking soda)
- Pinch of salt
- 175g/6oz chocolate chips
- 50g/2oz/⅓ cup walnuts, chopped.
STEPS:
- Preheat the oven to 180°C/350°F/ Gas 4. Grease two large baking sheets.
- With an electric mixer, cream the butter or margarine and two sugars together until light and fluffy.
- In another bowl, mix the egg and vanilla, then gradually beat into the butter mixture. Sift over the flour, bicarbonate of soda and salt, and stir.
- Add the chocolate chips and walnuts, and mix to combine well.
- Place heaped teaspoonfuls of the dough 5cm/2 in apart on the prepared sheets. Bake until lightly colored, 10-15 minutes. Transfer to a rack to cool.
