But I skipped as I don’t have a round stencil to spread the batter evenly and I think it’s a great challenge to make the cookie into an arched too Almond tuile is an elegant French cookie. With just six simple pantry ingredients, you can easily make these crisp, buttery and nutty cookies. These cookies are great for all year round as well as holidays.

I am happy with the outcome of these Tuiles though I didn’t shape it in the traditional signature shape. They are not so thin but yet very crisp.
Almond Tuiles

INGREDIENTS:
MAKES 40- 50g/2oz/⅓ cup blanched almonds
- 115g/4oz/generous ½ cup caster (superfine) sugar
- 50g/2oz/¼ cup unsalted (sweet) butter
- 2 egg whites
- 40g/1½oz/⅓ cup plain (all-purpose) flour
- 2.5ml/½ tablespoon vanilla extract
- 115g/4oz/1 cup flaked (sliced) almonds
STEPS:
- Grind the blanched almonds with 30ml/2 tablespoon of the sugar in a food processor, blender or nut grinder. If necessary, grind in batches.
- Preheat the oven to 220°C/425°F. Grease two baking sheets.
- Put the butter in a large bowl and mix in the remaining sugar, using a metal spoon. With an electric mixer, cream them together until light and fluffy.
- Add the egg whites and stir until blended. Sift over the flour and fold in with a metal spoon. Fold in the ground almonds and vanilla extract.
- Working in small batches, drop tablespoonfuls of the mixture 7.5cm/3 in apart on one of the prepared sheets. With the back of a spoon, spread out into thin, almost transparent circles about 6cm/2 inch in diameter. Sprinkle each circle with some of the flaked almonds.
- Bake until the outer edges have brown slightly, about 4 minutes.
- Remove from the oven. With a metal spatula, quickly drape the biscuits over a rolling pin to form a curved shape. Transfer to a rack when firm. If the biscuits harden too quickly to shape, reheat them briefly Repeat the baking and shaping process until the mixture is used up. Store in an airtight container.
