INGREDIENTS

MAKES 14 COOKIES 
  • 175g/6oz/¾ cup butter or, margarine at room temperature
  • 175g/6oz/scant 1 cup caster (superfine) sugar 
  • 1 egg yolk 
  • 175g/6oz/1½ cups plain (all-purpose) flour 
  • 5ml/1 tsp bicarbonate of soda (baking soda) 
  • 2.5ml/½ tsp salt 
  • 50g/2oz/½ cup rolled oats 
  • 50g/2oz/½ cup small crunchy nugget cereal

STEPS

  1. With an electric mixer, cream the butter or margarine and sugar together until light and fluffy. Mix in the egg yolk. 
  2. Sift over the flour, bicarbonate of soda and salt, then stir into the butter mixture. Add the oats and cereal and stir to blend. Chill for at least 20 minutes. Meanwhile, preheat the oven to 190°C/375°F/Gas 5. Grease a baking sheet. 
  3. Roll the mixture into the ball. Place them on the sheet and flatten with the bottom of a floured glass.
  4. Bake until golden, 10-12 minutes. With a metal spatula, transfer to a rack to cool completely. Store in an airtight container. 

VARIATION 

For Nutty Oatmeal Cookies, substitute in equal quantity of chopped walnuts or pecan nuts for the cereal and prepare as described.
