These blueberry muffins are short and easy with a moist and gentle middle bursting with blueberries and flawlessly golden brown top. They are more easy to make, too.

INGREDIENTS:

MAKES 12 
  • 185g/6½oz/1⅔ cup plain (all-purpose) flour 
  • 65g/2½oz/5 tsp caster (superfine) sugar 
  • 10ml/2 tsp baking powder 
  • 1.5ml/¼ tsp salt 
  • 2 eggs 
  • 50g/2oz/¼ cup butter, melted 
  • 175ml/6fl oz/¾ cup milk 
  • 5ml/1 tsp vanilla extract 
  • 5ml/1 tsp grated lemon rind 
  • 175g/6oz/1½ cups fresh blueberries

STEPS

  1. Preheat the oven to 200°C/400°F/Gas 6.  
  2. Grease a 12-cup muffin tray. 
  3. Sift the flour, sugar, baking powder and salt into a bowl. 
  4. In another bowl, whisk the eggs until blended. Add the melted butter, milk, vanilla and lemon rind, and stir to combine. 
  5. Make a well in the dry ingredients and pour in the egg mixture. With a large metal spoon, stir just until the flour is moistened, not until smooth. 
  6. Fold in the blueberries.
  7. Spoon the batter into the tray leaving room for the muffins to rise. 8. Bake until the tops spring back when touched lightly, 20-25 minutes. Leave to cool in the tray for 5 minutes before turning out.
