INGREDIENTS:

- 25g/1oz plain (semi sweet) chocolate
- 25g/1oz dark (bittersweet) cooking chocolate
- 225g/8oz/2 cups plain (all-purpose) flour
- 2.5ml/½ tsp salt
- 225g unsalted (sweet) butter, at room temperature
- 225g/8oz/1 cup caster (superfine) sugar
- 2 eggs
- 5ml/1 tsp vanilla extract
- 115g/4oz/1 cup finely chopped walnuts
STEPS:
- Melt the chocolates in the top of a double boiler, or in a heatproof bowl set over a pan of gently simmering water. Set aside.
- In a small bowl, sift together the flour and salt. Set aside.
- With an electric mixer, cream the butter until soft. Add the sugar and continue beating until the mixture is light and fluffy.
- Mix the eggs and vanilla, then gradually stir into the butter mixture.
- Stir in the chocolate, then the flour. Stir in the nuts.
- Divide the mixture into four equal parts, and roll each into 5cm/2in diameter logs. Wrap tightly in foil and refrigerate or freeze until firm.
- Preheat the oven to 190°C/375°F/Gas 5. Grease two baking sheets.
- With a sharp knife, cut the logs into 5mm/¼in slices. Place the rounds on the prepared sheets and bake until lightly coloured, about 10 minutes. Transfer to a rack to cool.
VARIATIONS
For two-tone biscuits, melt only half the chocolate. Combine all the ingredients, except the chocolate, as above. Divide the mixture in half. Add the chocolate to one half. Roll out the plain mixture onto a flat sheet. Roll out the chocolate mixture, place on top of the plain one and roll up. Wrap, slice and bake as described.
