INGREDIENTS:

- 115g/4oz/½ cup butter, at room temperature
- 200g/7oz/1 cup caster (superfine) sugar
- 2 egg yolks
- 15ml/1 tablespoon fresh orange juice
- Grated rind of 1 large orange
- 200g/7oz/scant 2 cups plain (all-purpose) flour
- 10g/¼oz/1 tsp corn flour (cornstarch)
- 2.5ml/½ tsp salt
- 5ml/1 tsp baking powder.
STEPS:
- With an electric mixer, cream the butter and sugar until light and fluffy. Add the yolks, orange juice and rind, and continue beating to blend. Set aside.
- In another bowl, sift together the flour, corn flour, salt and baking powder. Add to the butter mixture and stir until it forms a dough.
- Wrap the dough in baking parchment and chill for 2 hours.
- Preheat the oven to 190°C/375°F/Gas 5. Grease two baking sheets.
- Roll spoonsful of the dough into balls and place 2.5-5cm/1-2in apart on the prepared sheets.
- Press down with a fork to flatten. Bake until golden brown, 8-10 minutes. With a metal spatula transfer to a rack to cool.
