INGREDIENTS

MAKES 30 
  • 115g/4oz/½ cup butter, at room temperature 
  • 200g/7oz/1 cup caster (superfine) sugar
  • 2 egg yolks 
  • 15ml/1 tablespoon fresh orange juice 
  • Grated rind of 1 large orange 
  • 200g/7oz/scant 2 cups plain (all-purpose) flour 
  • 10g/¼oz/1 tsp corn flour (cornstarch)
  • 2.5ml/½ tsp salt
  • 5ml/1 tsp baking powder.

STEPS

  1. With an electric mixer, cream the butter and sugar until light and fluffy. Add the yolks, orange juice and rind, and continue beating to blend. Set aside. 
  2. In another bowl, sift together the flour, corn flour, salt and baking powder. Add to the butter mixture and stir until it forms a dough. 
  3. Wrap the dough in baking parchment and chill for 2 hours. 
  4. Preheat the oven to 190°C/375°F/Gas 5. Grease two baking sheets. 
  5. Roll spoonsful of the dough into balls and place 2.5-5cm/1-2in apart on the prepared sheets. 
  6. Press down with a fork to flatten. Bake until golden brown, 8-10 minutes. With a metal spatula transfer to a rack to cool.
