INGREDIENTS:

- 115g/4oz/1 cup plain (all-purpose) flour
- 7.5ml/1½ tsp baking powder
- 5ml/1 tsp ground cinnamon
- 2.5ml/½ tsp freshly grated nutmeg
- 1.5ml/¼ tsp ground cloves
- 1.5ml/¼ tsp ground allspice
- 200g/7oz/½ cups raisins
- 115g/4oz/½ cup butter or margarine, at room temperature 90g/3½oz/½ cup sugar
- 2 eggs
- 165g/5½oz/scant ½ cup black treacle (molasses)
- 50g/2oz/⅓ cup walnuts, chopped
STEPS:
- Preheat the oven to 180°C/350°F/ Gas 4. Line a 33 x 23cm/13 x 9-inch tin (pan) with baking parchment; grease.
- Sift together the flour, baking powder and spices.
- Place the raisins in another bowl and toss with a few tablespoonfuls of the flour mixture.
- With an electric mixer, cream the butter or margarine and sugar together until light and fluffy. Beat in the eggs, one at a time, then the molasses. Stir in the flour mixture, raisins and walnuts.
- Spread evenly in the tin. Bake until just set, 15–18 minutes. Cool in the tin before cutting into bars.
