How To Make Spiced Raisin Bars At Home?

    INGREDIENTS

    MAKES 30 
    • 115g/4oz/1 cup plain (all-purpose) flour
    • 7.5ml/1½ tsp baking powder 
    • 5ml/1 tsp ground cinnamon 
    • 2.5ml/½ tsp freshly grated nutmeg 
    • 1.5ml/¼ tsp ground cloves 
    • 1.5ml/¼ tsp ground allspice
    • 200g/7oz/½ cups raisins 
    • 115g/4oz/½ cup butter or margarine, at room temperature 90g/3½oz/½ cup sugar 
    • 2 eggs 
    • 165g/5½oz/scant ½ cup black treacle (molasses) 
    • 50g/2oz/⅓ cup walnuts, chopped

    STEPS

    1. Preheat the oven to 180°C/350°F/ Gas 4. Line a 33 x 23cm/13 x 9-inch tin (pan) with baking parchment; grease. 
    2. Sift together the flour, baking powder and spices. 
    3. Place the raisins in another bowl and toss with a few tablespoonfuls of the flour mixture. 
    4. With an electric mixer, cream the butter or margarine and sugar together until light and fluffy. Beat in the eggs, one at a time, then the molasses. Stir in the flour mixture, raisins and walnuts. 
    5. Spread evenly in the tin. Bake until just set, 15–18 minutes. Cool in the tin before cutting into bars.
