INGREDIENTS

MAKES 10 
  • 115g/4oz/½ cup butter or margarine, at room temperature 
  • 65g/2½oz/5 tablespoon caster (superfine) sugar 
  • 25g/1oz/2 tablespoon soft dark brown sugar 
  • 2 eggs, at room temperature 
  • 215g/7½oz/scant 2 cups plain (all-purpose) flour 
  • 5ml/1 tsp baking powder 
  • 120ml/4fl oz/½ cup milk 
  • 175g/6oz/ plain chocolate chips

STEPS

  1. Preheat the oven to 190°C/375°F/ Gas 5. Grease 10 muffin cups or use paper cases. 
  2. With an electric mixer, cream the butter or margarine until soft. Add both sugar and beat until light and fluffy. Beat in the eggs, one at a time.
  3. Sift together the flour and baking powder, twice. Fold into the butter mixture, alternating with the milk. 
  4. Divide half the mixture between the muffin cups. Sprinkle several chocolate chips on top, then cover with a spoonful of the batter. To ensure even baking, half-fill any empty cups with water. 
  5. Bake until lightly coloured, about 25 minutes. Leave to stand for 5 minutes before turning out.
