Believed to have originated up in Oregon, back when the pennies have been a half dollar size, these little guys aren’t a cracker or a cookie: they’re a savory shortbread. Still warm from the oven, they’re really addictive. However they’d additionally be delicious on a cheese board, with drinks, or crumbled on a salad.

INGREDIENTS:

- 50g/2oz/¼ cup butter
- 115g/4oz/1⅓ cups Cheddar cheese, grated
- 40g/1½oz/⅓ cup plain (all-purpose) flour
- Pinch of salt
- Pinch of chili powder.
STEPS:
- Put the butter in a large bowl and cut into 2.5cm/1-inch cubes. With an electric mixer, cream the butter until soft and fluffy.
- Stir in the cheese, flour, salt and chili. Gather to form a dough.
- Transfer to a lightly floured surface. Shape into a cylinder about 3cm/1¼in in diameter. Wrap in baking parchment and chill for 1-2 hours.
- Preheat the oven to 180°C/350°F/Gas 4. Grease one or two baking sheets.
- Cut the dough into 5mm/¼in thick slices and place on the prepared baking sheets. Bake for about 15 minutes, until golden. Transfer to a wire rack to cool.
