INGREDIENTS:
MAKES 16
- 2 eggs
- 10ml/2 tsp vanilla extract
- Pinch of salt
- 175g/6oz/1 cup pecan nuts, coarsely chopped
- 50g/2oz/½ cup plain (all-purpose) flour
- 50g/2oz/¼ cup caster (superfine) sugar
- 120ml/4fl oz/½ cup golden (light corn) syrup
- 75g/3oz plain (semisweet) chocolate, finely chopped
- 45ml/3 tsp butter
- 16 pecan halves, for decorating
STEPS:
- Preheat the oven to 160°C/325°F/Gas 3. Line the base and sides of a 20cm/8in square baking tin (pan) with baking parchment and grease lightly.
- Whisk together the eggs, vanilla and salt. In another bowl, mix the pecan nuts and flour. Set both aside.
- In a pan, bring the sugar and golden syrup to the boil. Remove from the heat and stir in the chocolate and butter and blend thoroughly with a wooden spoon.
- Mix in the beaten eggs, then fold in the pecan mixture.
- Pour the mixture into the prepared tin and bake until set, about 35 minutes. Cool in the tin for 10 minutes before turning out. Cut into 5cm/2in squares and press pecan halves into the tops while warm. Cool completely on a rack.
