INGREDIENTS

MAKES 16 
  • 2 eggs
  • 10ml/2 tsp vanilla extract 
  • Pinch of salt 
  • 175g/6oz/1 cup pecan nuts, coarsely chopped 
  • 50g/2oz/½ cup plain (all-purpose) flour 
  • 50g/2oz/¼ cup caster (superfine) sugar
  • 120ml/4fl oz/½ cup golden (light corn) syrup 
  • 75g/3oz plain (semisweet) chocolate, finely chopped 
  • 45ml/3 tsp butter 
  • 16 pecan halves, for decorating


STEPS:

  1. Preheat the oven to 160°C/325°F/Gas 3. Line the base and sides of a 20cm/8in square baking tin (pan) with baking parchment and grease lightly. 
  2. Whisk together the eggs, vanilla and salt. In another bowl, mix the pecan nuts and flour. Set both aside. 
  3. In a pan, bring the sugar and golden syrup to the boil. Remove from the heat and stir in the chocolate and butter and blend thoroughly with a wooden spoon. 
  4. Mix in the beaten eggs, then fold in the pecan mixture.  
  5. Pour the mixture into the prepared tin and bake until set, about 35 minutes. Cool in the tin for 10 minutes before turning out. Cut into 5cm/2in squares and press pecan halves into the tops while warm. Cool completely on a rack.
