These muffins are super easy to make and are super delicious follow the steps below to make them. These muffins are so tasty that whenever I make them at home it gets finished in 2-3 Days!
INGREDIENTS:

- 50g/2oz/¼ cup butter or margarine
- 1 egg
- 90g/3½oz/½ cup caster (superfine) sugar
- Grated rind of 1 large orange
- 120ml/4fl oz/½ cup freshly squeezed orange juice
- 150g/5oz/1¼ cups plain (all-purpose) flour
- 5ml/1 tsp baking powder
- 2.5ml/½ tsp bicarbonate of soda (baking soda)
- 5ml/1 tsp ground cinnamon
- 2.5ml/½ tsp freshly grated nutmeg
- 2.5ml/½ tsp ground allspice
- 1.5ml/¼ tsp ground ginger
- 1.5ml/¼ tsp salt
- 1-2 eating apples
- 150g/6oz/1½ cups cranberries
- 50g/2oz/⅓ cup walnuts, chopped
- icing (confectioners') sugar, for dusting (optional)
STEPS:
- Preheat the oven to 180°C/350°F/Gas 4. Grease a 12-cup muffin tray or use paper cases.
- Melt the butter or margarine over gentle heat. Set aside to cool.
- Place the egg in a mixing bowl and whisk lightly. Add the melted butter or margarine and whisk to combine.
- Add the sugar, orange rind and juice. Whisk to blend, then set aside.
- In a large bowl, sift together the flour, baking powder, bicarbonate of soda, cinnamon, nutmeg, allspice, ginger and salt. Set aside.
- Quarter, core and peel the apples. With a sharp knife, chop coarsely.
- Make a well in the dry ingredients and pour in the egg mixture. With a spoon, stir until just blended.
- Add the apples, cranberries and walnuts, and stir to blend.
- Fill the cups three-quarters full and bake until the tops spring back when touched lightly, 25-30 minutes. Transfer to a rack to cool. Dust with icing sugar if you like.
