How To Make Farmhouse Cookies At Home?

 
These freshly baked Farmhouse Cookies are so crisp and flaky. They’re overloaded with nuts, peanut butter and more goodness. Simply perfect for a quick snack or even to munch on when you have no time for breakfast. These farmhouse cornflakes cookies are super crisp and full of flavor.

Similarly, they’re easy to make and super yummy. Additionally, these cookies give you the best of nuts, muesli, raisins and more.

NOTES

  • You can even add a few more nuts of your choice to the mixture (eg Cashews, almonds, etc)
  • Always store the cookies in an airtight container to make sure they remain crunchy
  • Do not let the cookie mixture stay unbaked for long as the muesli in it may get soggy.

INGREDIENTS:

MAKES 18
  • 115g/4oz/½ cup butter or margarine, at room temperature
  • 90g/3½oz/generous 1 cup light brown sugar
  • 65g/2½oz/¼ cup crunchy peanut butter
  • 1 egg
  • 50g/2oz/½ cut plain (all-purpose) flour
  • 2.5ml/½ tablespoon baking powder
  • 2.5ml ground cinnamon
  • Pinch of salt
  • 175g/6oz/1½ cup muesli (granola)
  • 50g/2oz/⅓ cup chopped walnuts
  • 50g/2oz/½ cup raisins.

STEPS:

  1. Preheat the oven to 180°C/350°F. Grease a baking sheet.
  2. With an electric mixer, cream the butter or margarine and sugar until light and fluffy. Beat in the peanut butter. Beat in the egg.
  3. Sift the flour, baking powder, cinnamon and salt over the peanut butter mixture and stir to blend. Stir in the muesli, raisins and walnuts. Taste the mixture to see if it needs more sugar, as muesli varies.
  4. Drop rounded tablespoonfuls of the mixture on to the prepared baking sheet about 2.5cm/l in apart. Press gently with the back of a spoon to spread each mound into a circle.
  5. Bake until lightly coloured, about 15 minutes. With a metal spatula, transfer to a rack to cool. Store in an airtight container.
  6. Makes 18 delicious cookies
