INGREDIENTS:

- 175g/6oz/1 cup pecan nuts
- 350g/12oz/3 cups plain (all-purpose) flour
- 5ml/1 tsp baking powder
- 5ml/1 tsp bicarbonate of soda (baking soda)
- 1.5ml/¼ tsp salt
- 1.5ml/¼ tsp ground cinnamon
- 90g/3½oz/½ cup caster (superfine) sugar
- 65g/2½oz/scant ⅓ cup soft light brown sugar
- 45ml/3 tablespoon maple syrup
- 150g/5oz/10 tablespoon butter, at room temperature
- 3 eggs, at room temperature
- 300ml/½ pint/1¼ cups buttermilk
- 60 pecan halves, for decorating
STEPS:
- Preheat the oven to 180°C/350°F/Gas 4. Lightly grease 20 deep muffin cups or use paper cases.
- Spread the pecan nuts on a baking sheet and toast in the oven for 5 minutes. When cool, chop coarsely and set aside.
- In a bowl, sift together the flour, baking powder, bicarbonate of soda, salt and cinnamon. Set aside.
- In a large mixing bowl, combine the caster sugar, light brown sugar, maple syrup and butter. Beat with an electric mixer until light and fluffy.
- Add the eggs, one at a time, beating to incorporate thoroughly after each addition.
- Pour half the buttermilk and half the dry ingredients into the butter mixture, then stir until blended. Repeat with the remaining buttermilk and dry ingredients.
- Fold in the chopped pecan nuts. Fill the prepared cups two-thirds full. Top with the pecan halves. For even baking, half-fill any empty cups with water.
- Bake until puffed up and golden, 20-25 minutes. Leave to stand for 5 minutes before turning out.
