INGREDIENTS:
MAKES 1 LOAF
- 225g/8oz/2 cups plain (all purpose) flour
- 115g/4oz generous/½ cup caster (superfine) sugar
- 15ml/1 tablespoon baking powder
- 2.5/½ tsp salt
- Grated rind of 1 large orange
- 170ml/5½fl oz/scant ¾ cup fresh orange juice
- 2 eggs, lightly beaten
- 75g/3oz/6 tablespoon butter or margarine, melted
- 115g/4oz/1 cup fresh cranberries or bilberries
- 50g/2oz/½ cup chopped walnuts
STEPS:
- Preheat the oven 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease.
- Sift the flour, sugar, baking powder and salt into a mixing bowl.
- Stir in the orange rind.
- Make a well in the center and add the orange juice, eggs and melted butter or margarine. Stir from the center until the ingredients are blended; do not overmix.
- Add the berries and walnuts and stir until blended.
- Transfer the mixture to the prepared tin and bake until a skewer inserted into the center comes out clean, 45-50 minutes.
- Leave to cool in the tin for 10 minutes before transferring to a rack to cool completely. Serve thinly sliced, toasted or plain, with butter or cream cheese and jam.
