Bake Delicious Fruity Tea Bread At Home?

INGREDIENTS: 

MAKES 1 LOAF 
  • 225g/8oz/2 cups plain (all purpose) flour 
  • 115g/4oz generous/½ cup caster (superfine) sugar 
  • 15ml/1 tablespoon baking powder 
  • 2.5/½ tsp salt 
  • Grated rind of 1 large orange 
  • 170ml/5½fl oz/scant ¾ cup fresh orange juice 
  • 2 eggs, lightly beaten 
  • 75g/3oz/6 tablespoon butter or margarine, melted 
  • 115g/4oz/1 cup fresh cranberries or bilberries 
  • 50g/2oz/½ cup chopped walnuts

STEPS:

  1. Preheat the oven 180°C/350°F/Gas 4. Line a 23 x 13cm/9 x 5in loaf tin (pan) with baking parchment and grease. 
  2. Sift the flour, sugar, baking powder and salt into a mixing bowl. 
  3. Stir in the orange rind. 
  4. Make a well in the center and add the orange juice, eggs and melted butter or margarine. Stir from the center until the ingredients are blended; do not overmix.  
  5. Add the berries and walnuts and stir until blended. 
  6. Transfer the mixture to the prepared tin and bake until a skewer inserted into the center comes out clean, 45-50 minutes. 
  7. Leave to cool in the tin for 10 minutes before transferring to a rack to cool completely. Serve thinly sliced, toasted or plain, with butter or cream cheese and jam.
